There is only one single velocity field. As kknade highlighted all other properties like density, viscosity are phase averaged. Fluent does a sort of mass weighted average here to get the bulk velocity.
Just add the equations from Eulerian Model together and you will get the ones for Mixture and VOF model. This is not Fluent only this is also Test Book and all Multiphase References.
