I want to melt a solid structure of a thermoplastic and make it to fill up a container. A time and temperature dependent multi phase analysis of a viscoelastic material. Which model and solver should I use?
If you are looking to simply melt the plastic and see how it fills up the container, I'd suggest that you use Ansys Fluent for this analysis. You could use the Solidification/Melting model. You will need a solid-liquid melt temperature. In addition, you will also need the latent heat for melting.
Anything else really depends on what additional physics you are looking to model.

It is possible to visualize the phase changing animation of the melting using temperature contour plot. But is it possible to visualize the phase transitional flow of material from the solid state to liquid state where the entire solid is removed?
No, Fluent will simply be simulating the melting process from a pure Fluid Dynamics perspective. If you are looking to understand the phase transitional flow, you will need to use a different tool. Let me check internally which tool is more apt for this and get back to you.
