I'm not sure, but if you are using version 2020R1, then there is a beta feature that will allow non-graphical script execution for all commands. Go to the menu Tools > Options > General Options, and in the General category, click on the Beta options. Check the option for "Non-graphical command execution". Then, you can use any script using the "-RunScriptAndExit" command with "-ng" option.
If you are using an earlier version, you can try to export fields with -batchextract option, but I don't know. It would be feasible to create XY plots with field data for lines, planes, and more complicated families of field data, so that you can export any arbitrary .csv files of data, but depending on the workflow that could be more complicated than you need.
