You might be able to mess with Profiles, https://ansyshelp.ansys.com/account/Secured?returnurl=/Views/Secured/corp/v232/en/flu_ug/flu_ug_expressions_sources.html to cheat. Units are going to be an issue, but you'll just need to multiply by 1[m/s/K] or the like.
Otherwise UDFs can read external data files.
