You've set two layers of cells to be the lower value. The rest of the domain is the higher value. When you display contours you smooth the result to give a "nicer" image: otherwise you get the cell centre value. Turning off the node values will give the cell centre value but may also give a very tessellated result if the mesh is too coarse.
