I'm a masters student working on metal AM modeling. I'm wondering if anybody knows of non-confidential research papers or documentation that discusses the process of how specifically the ANSYS additive solver works in more detail. My specific question is if the solver models the laser motion, or just heats full layers all at once. In my experience, the former is too computationally expensive. I understand that this is a tricky subject and may be completely confidential, so any help would be great.

You are right modeling every single deposition layer is very expensive and impractical, Ansys uses what we call a lumped-layer approach which basically accounts for several laser passes/deposition layers at once.
We also use Weak Coupling, i.e., a full transient thermal analysis is performed after which a static structural simulation is performed.
