is it possible to move the origin to a location other than sharp edges? For example center of holes or other points? As it is now limited

I don't think the origin can be moved at any arbitrary locations. When you select the origin circle (red color) and start to drag it, all valid locations are highlighted which can be used as origins for defining the hole table. These locations are mostly the corners of the geometry.
