How to change the grid of mesh

  I am new to ansys and when I was trying to mesh the newly created surface, instead of a rectangular grid, a weird circular grid showed up and I have no idea how to change it back to the rectangular grid.

  Using Help and navigating to Meshing will give you some tutorials, or look at the courses https://courses.ansys.com/index.php/courses/flow-over-an-airfoil/lessons/mesh-lesson-4-32/
  Meshing is used in CFD, and the only difference to Mechanical is it's lacking the solver parts. So, the tutorials will show you what you need, and that should then work in Mechanical.
