  why is sometimes 'contour' type of results in form of 'mesh' and sometimes in form of 'continuity colours'

  You might need to check how you are displaying these contours. Do you have the "Filled" option checked? perhaps you can share a screenshot

  If your case is 2D, make sure you are selecting a surface in your Contour definitions to have "filled contour colours". Choosing an interior region will result in a mesh-like plot.
