The extended chart options are generic and there can be some options which look immaterial from Structures point of view but are useful for other physics such as Fluids.
In structures, for deformation results, once the component is selected to X, Y, Z or SUM, there is no further need to worry about other options like "Direction" and the direction option is redundant in this scenario. But, say for Fluids, the directions option can be useful while extracting velocities in some direction other then global X Y or Z, for instance, normal to any particular surface.
Since the extended options of chart are not customized based on the result selected or physics of simulation, user has to make a careful selection and alter only the options required, leaving all other options to defaults used.

I discussed the query with development and have learnt that the chart options are indeed confusing. The good part is that development has already reorganized these options to add clarity to them and the update would be available in next release. I suggest not to bother much about the different options that are exposed now as they may or may not be significant and might go away in future. However, if you have some specific requirement and want us to suggest what chart settings will help you achieve it in the current setup, please let us know. I will be glad to help you with a solution.
