In simple terms, I have a rectangular aluminum part, that contains circular internal cooling channels of water at 20 degrees C. I want to see the effect of different water velocities on the surface temperatures of the aluminum part. I have a constant heat flux condition on the top surface of the aluminum part.
Right now, I have 2 "Solutions". The first one is a Thermal static one. The second is a Fluid Internal one. However, I'm not sure they are talking to each other? If I change the flow velocity of the water, I do not see a change in the aluminum surface temperatures. Alternatively, even with the heat flux condition, I do not see a temperature change in the water between inlet and outlet. In fact, the water temperature stays constant throughout, at 0 degrees celsius ---even through the boundary condition says it is at 20 degrees C

That is as expected. The Fluid analysis will only look at the behavior of the fluid. Any other boundary conditions will affect the fluid, but you will not see any change in the surrounding solids.

If I want to complete this analysis then, would my only option from ANSYS be ANSYS Fluent?

You are able to simulate a Conjugate Heat Transfer (CHT) simulation in Discovery AIM. Please see the following tutorial.
